Erode turmeric has the world's highest curcumin content (3–5%). India supplies 80% of global turmeric demand. Exported as fingers (whole), polished fingers, and powder (mesh 40–200). Curcumin content is the primary quality spec for pharmaceutical buyers. Erode 'Rajapore' and 'Alleppey Finger' are premium grades.

Guntur Sannam is world's most exported chilli — sharp heat (50,000–100,000 SHU), bright red colour. Byadgi from Karnataka is a low-heat (10,000–20,000 SHU), deep-red colour variety preferred for colour extraction (oleoresin). Available whole dry, crushed, powder, and oleoresin.

Rajasthan (Jodhpur, Barmer), Gujarat
Rajasthan produces 70% of India's cumin. Indian cumin has a higher essential oil content (2.5–4%) and stronger aroma than Turkish or Iranian cumin — commanding a quality premium. Exported whole, cracked, and as essential oil. Cumin oleoresin used in food flavouring industry.

Kerala's Western Ghats produce India's finest cardamom. 7mm+ size (bold grade) commands the highest price. Guatemala dominates volume; India dominates quality. Key quality: moisture ≤12%, volatile oil ≥5ml/100g. Exported to Saudi Arabia, UAE, and European food industry.

The 'King of Spices' — Kerala MG1 (Malabar Garbled 1) is the benchmark for premium black pepper globally. Piperine content (5–9%) is the active compound and quality measure. Available: black (sun-dried), white pepper (washed, brine-processed), and green pepper (freeze-dried). Growing demand for white pepper in EU.
