Nashik is India's onion capital — the pungent, deep-red variety famous for its long shelf life and high TSS (Total Soluble Solids ≥10%). India is world's #2 onion exporter. Three crops per year: Kharif, late-Kharif, and Rabi. White onion (Bhavnagar, Gujarat) for dehydration and food processing.

India is world's #2 garlic producer. Export-grade single-clove (pearl garlic) and multi-clove in 5–50mm sizes. 60–90 days shelf life at ambient temperature. Value-added: dehydrated garlic flakes, granules, and powder — preferred by food manufacturers globally.

Green Chilli — Fresh & Dried

India is the world's largest green chilli producer and exporter. Varieties range from mild Bhavnagri (used as a vegetable) to fiery Kanthari (bird's eye). Fresh green chilli exported to UAE, UK, and USA diaspora markets. Dried green chilli, chilli flakes, and green chilli paste available as value-added formats for food manufacturers.

Capsicum (Bell Pepper) — Red, Yellow & Green

India exports all three colours of bell pepper — green (unripe, firm), red (fully ripe, sweet), and yellow (semi-ripe, mild). Kolar (Karnataka) and Shimla hills are key growing regions. High demand from UAE, EU, and Southeast Asia. Capsicum oleoresin and paprika colour extract are premium processed exports from red varieties.

India is the world's largest okra producer — contributing 70% of global output. Export grade: tender pods 6–12cm length, bright green, no yellowing. Primarily exported fresh to UAE, UK, and Canada (South Asian diaspora). IQF (individually quick frozen) okra is a major processed export — sliced and whole — used in ready meals globally.

Bitter Gourd (Karela)

A staple of South and Southeast Asian cooking, bitter gourd is increasingly valued in health food markets for its blood sugar-regulating properties (charantin and momordicin compounds). Fresh export to UAE, UK, and East Africa. Dried bitter gourd slices and bitter gourd powder (for nutraceutical capsules) are growing export formats.

Fresh moringa pods (drumsticks) are a culinary staple of South Indian cooking — essential in sambar. Tamil Nadu is the largest producer. Exported fresh to UAE and UK Indian diaspora markets. Distinguished from moringa leaf export — the pod itself is a vegetable with a mild, earthy sweetness. Peak season: February–May.

Brinjal / Eggplant (Baingan)

India is the world's #2 brinjal producer. Wide variety range: large purple (Bharata variety), small green, long purple, and the prized white brinjal. Exported to UAE, UK, and USA diaspora markets. Gujarat's round brinjal is ideal for the famous bharwa baingan (stuffed brinjal). Available fresh and as brinjal pickle.
